Yes… I cut the recipe in half, however, if you are feeding a crowd you are more than welcomed to double or triple the ingredients listed below! :) Also, make sure to pull out that kitchen scale, we’re going to need it for this batch of cookies.
Ingredients
5 ounces of butter, softened
75 grams of sugar
1 large egg
Splash of vanilla extract
255 grams of all-purpose flour
Jam, optional, for garnish
Confectioners' sugar, optional, for garnish
Instructions
Preheat the oven to 350°F.
In a large bowl, use a hand mixer or the bowl of a stand mixer to beat together the butter and sugar until the mixture is light and fluffy.
Add the egg and vanilla, mixing until fully incorporated.
Add the flour and continue mixing until a smooth dough forms. Cover the bowl with plastic wrap and refrigerate the cookie dough for 1 hour.
Working with half of the chilled dough at a time, roll it between two pieces of parchment paper to a thickness of 1/8 inch or 3/16 inch if making sandwich cookies.
Remove the top piece of parchment paper and cut the dough into various shapes. Since the dough doesn't expand much during baking, leave a 1/2-inch space between cookies. If the dough becomes too soft at any point, refrigerate it for a few minutes before continuing.
For sandwiched cookies, cut an even number of plain cookies and an equal number of cookies with a small "window" cut out using a thimble or piping tip to allow the jam or filling to peek through.
Remove the scraps and, holding the parchment paper by opposite corners, place it on a sheet pan. Tip: Freeze the cookie dough for 10 to 15 minutes before baking to help the shapes hold.
Bake for 8 to 10 minutes, ensuring the cookies don't brown—they should remain light but thoroughly baked.
Allow the cookies to cool completely. Repeat the process with the remaining dough. Excess dough can be wrapped and refrigerated.
For sandwiched cookies, sprinkle confectioners’ sugar over the cookies with a "window." Spread jam or filling on the "window-less" cookies.
Create sandwiches by placing confectioners' sugar cookies on top of the jammed cookies. Enjoy!
